Quinoa Stir-Fry

Although I have never had Chinese foods due to allergies, this free from common allergens and nourishing meal is perfect! Make this with any vegetables or special add ins of your choice!

Ingredients:

-1 cup of cooked Quinoa

-½ cup of corn, cooked

-½ cup of broccoli, cut and blanched

-2-3 eggs

-sprinkle of pepper

-Cheese (optional)

Steps:

Step #1: In a skillet start by cracking eggs and season with pepper. When a third of the way done, add in the quinoa and mix, scrambling the eggs.

Step #2: Combine for about thirty seconds then add in the corn and broccoli. At this point, you may also add more pepper to the quinoa. Let cook for about another minute then serve with cheese. Enjoy 💙
