Quinoa, Spinach, and Chicken Paella
Ingredients:
-1 lb. of Chicken breasts, cubed
-One box of spinach
-1 cup of quinoa
-1 tsp. of sumac, pepper, paprika, oregano, and red crushed pepper
-1 lemon cut into fourths (for decoration)
Chopped coriander (for decoration)
-2 tbs. of avocado oil
-2 tbs. of parmesan
This is my take on a healthy and delicious Paella that that is efficient and simple to make. The flavor combinations and seasoning makes everyone want to go for seconds! Give this healthy and tasty take on Paella a try!
Step 1: In a bowl, combine 1 tbs. of avocado oil, all the seasoning, and chicken into a bowl. Leave to marinate in the fridge for however long you want. I left mine in for 20 minutes.
Steps:
Step 2: In a sauce pan, toast 1 cup of quinoa for 7 minutes, mixing timely. Add 2 cups of water and bring to a boil. Let simmer for 10 minutes covered.
Step 3: After 10 minutes, remove the lid and let the quinoa finish cooking. In a cast iron skillet, pour all of the chicken + the other tbs of avocado oil and cook the chicken thoroughly.
Step #4: Once chicken is done cooking, place all the chicken onto a cutting board and add all the spinach into the cast iron and sautee.
Step #5: Chop the cooked chicken into bite sized peices and add back in with the spinach. Add the quinoa and parmesan into the cast iron and mix for 3 minutes
Step #6: Take off the heat and sprinkle the coriander on top and add lemon to the corners. Enjoy 💙
