Oatmeal Cookies

This recipe is from my mom’s old cookbook that is always shoved into the back of the cabinet. These cookies have the perfect ratio of crunchy on the exterior and soft on the interior. Mama, if you’re reading this, please don’t sue me for copyright.

Ingredients:

- 2 cups of old fashioned oats

-1 cup of flour (I used Whole Wheat)

- ¾ tsp of cinnamon

-½ tsp of baking powder

-½ tsp of baking soda

-½ tsp of salt (kosher salt works best)

-1 stick of unsalted butter

-½ cup of light brown sugar

-¼ cup of sugar

- 1 egg

-½ tsp of vanilla sugar or extract

-1 cup of favorite add-ins such as chocolate chips or raisins

Steps:

Step #1: Preheat oven to 350 degrees. In a large bowl, combine the flour, cinnamon, baking powder, baking soda, salt, and sugar.

Step #2: In a stand mixer or hand mixer, combine the butter, brown sugar, egg, and vanilla. While mixing, slowly add in the dry mix until all is incorporated.

Step #3: Using a rubber spatula, mix in the oats and the add ins. Shape into round circles and press down on a baking sheet. Cook in the oven for 10-15 minutes depending on how chewy you want the cookie.

Step #4: Take them out of the oven and let them cool for 20 minutes. Enjoy💙
