Healthy Salmon Bowls

I only started to eat fish a few months ago, I would never touch a piece of salmon even for money. Yet once salmon bowls began to gain popularity, I couldn’t help but to give one a try! After a few experiments and help from my mom, this earthy and hearty bowl is perfect for quick dinners and will please the whole family!

Ingredients:

For the salmon:

-1 lbs of Salmon

-4 tbs of olive oil

-½ squeeze of lemon

-1 tsp of the following spices/herbs: sumac, pepper, paprika, Aleppo pepper, garlic powder, onion powder, and Italian seasoning

-1 tbs of honey

For the bowl:

-½ cup of Farro

-Boiled and fresh vegetables such as corn, edamame, and cucumbers

-Splash of lemon juice

Steps:

Step #1: Cube and remove the skin of the salmon and add into a medium sized bowl. Add the lemon juice, olive oil, honey, and the spices to the salmon and mix. Leave to marinate in the fridge for no less than 15 minutes.

Step #2: In a sauce pan, bring 1½ cups of water to a boil and add the Farro. Allow to simmer on low heat for 35 minutes.

Step #3: Preheat the oven to 400 degrees. Line an oven safe tray with parchment paper and space out each cube of salmon equally apart from each other. Cook for about 15 minutes flipping about halfway through.

Step #4: Drain the excess water out of the Farro and lightly oil it. Leave off the heat and covered to ensure a fluffier texture. Prepare the wanted vegetables by either boiling or chopping into bite sized pieces.

Step #5: Once the salmon has finished cooking, begin to assemble your bowl. Start with a bed of Farro, neatly piled salmon, and streaks of vegetables. Lastly, a splash of lemon juice to round it off. Enjoy 💙
