Ingredients:

-5 ½ cups of all purpose flour

-2 ½ cups of lukewarm water

-2 ½ tsp of honey

-5 tbsp. of olive oil, plus more for drizzling

-Unsalted butter, for greasing

-Fresh rosemary for topping

-Salt for finishing and 2 tsp for the dough

Steps:

Step #1: To make the yeast mixture, in a large bowl combine the water, yeast, and honey. Whisk and leave to activate for 15 minutes.

Step #2: Once the yeast becomes foamy, add the flour and two teaspoons of salt. Mix with a rubber spatula until a sticky but compacted dough forms.

Step #3: Use the 5 tablespoons of oil to lightly grease a separate bowl then transfer the dough there. Leave in the fridge to rise for 24 hours.

Step #4: In a 9 x 13 inch baking pan, grease thoroughly with unsalted butter. Using two forks, lift the dough from the edges towards the middle of the bowl and repeat for all four sides.

Step #6: Preheat the oven to 450 degrees. Handle the dough with care while stretching out to the edges of the pan. Use your fingers to create small circular dents into the bread. With the rosemary, press into the bread to insure that the flavor can be distributed throughout. Drizzle with olive oil and a sprinkle of salt.

Step #5: Transfer the dough into the prepared baking tray and spread out. Leave to rise again uncovered in a warm area for 2-3 hours for maximum height.

Step #7: Place into the oven for 20-25 minutes or until golden brown. Make sure to check the bottom before finishing up the cooking process. Enjoy 💙
