Broccoli Mac and Cheese

I love Mac and Cheese, who doesn’t?! The creaminess of the white cheddar that melts on your tongue as you take that first bite. The broccoli gives the pasta freshness and the excuse to say that you ate healthy today!

Ingredients:

-Pasta or boxed Mac and Cheese

-1 stem of broccoli

-½ cup of milk or heavy cream

-⅓ cup of cheddar cheese

-⅓ cup of parmesan

-Pepper to taste

-if using boxed Mac, the cheese powder/sauce

Steps:

Step #1: Cook pasta according to instructions on box, approximately 8-10 minutes.

Step #2: While pasta is cooking, start another saucepan with 2 cups of water. Cut the broccoli to small pieces and boil for 3-4 minutes.

Step #3: Scoop up ¼ cup of pasta water before straining. When the broccoli is done, strain as well.

Step #4: To make the cheese sauce, pour the milk into a pan on high heat mixing to make sure it doesn’t stick. Once it starts to slowly bubble, add all the cheese and pepper.

Step #5: Add the pasta and broccoli to the cheese mixture. Mix and serve with more parmesan cheese. Enjoy 💙
