Blueberry Muffins

These muffins are a perfect treat with a soft interior and a crunchy exterior. I started making these after we came back from a farm, we might have picked a little too many blueberries! It made four batches!

Ingredients:

-2 cups of flour

-½ granulated sugar (depending on how sweet the blueberries are, you can add or remove)

-2 teaspoons of baking powder

-½ teaspoon salt

-2 eggs

- ½ melted butter + more for greasing

-½ cup of milk

-1 teaspoon of vanilla extract

-2 cups of fresh blueberries

Steps:

Step #1: Preheat oven to 400 degrees. Prepare a muffin tin by greasing with melted butter.

Step #2: Sift together the flour, sugar, baking powder, and salt. Set aside. In another bowl, whisk eggs until smooth then add milk, butter and vanilla.

Step #3: Combine the wet and the dry mixture (it might be a little lumpy), fold them together. In a small bowl add the blueberries and a small sprinkle of flour, toss until incorporated. This helps the blueberries not sink in the baking process.

Step #4: Fold the blueberries into the mixture slowly not smashing the berries.

Step #5: Fill each muffin mold ⅔ of the way. Bake for 20-25 minutes or until golden brown. Check with a toothpick to make sure cooked all the way. Once done baking, leave them to cool for 10 minutes. Enjoy💙
